Try this tasty peach gazpacho, with Festina Peche
With the help of our friends at nearby Fifer Orchards, we whipped up some refreshing gazpacho with our summer seasonal Festina Peche.

Approx 1 gallon
Ingredients
- 3 bottles Festina Peche
- A dozen deseeded peaches, skin on
- 3 peeled, seeded and rough cut cucumbers
- 1/2 cup green onion, rough chop
- 1/2 cup yellow corn, roasted and shucked from cob
- 1/2 cup cilantro, rough chop
- 1/4 cup white balsamic vinegar
- 1/4 cup honey
- 3/4 cups extra virgin olive oil
- Water, as necessary
- Salt and pepper, to taste
Procedure
1. In a large bowl, combine all ingredients and mix well.
2. Using a blender, puree in batches until smooth. Add water as necessary to achieve desired consistency.
3. Season with salt and black pepper.
4. Garnish with a homemade peach salsa or chopped cilantro.
5. Enjoy!
