Dogfish and friends behind beer-themed restaurant at Eataly Chicago
"Non c'e' due senza tre" (All good things come in threes), say the Italians – and aren’t they right!
Soon-to-be-open Eataly Chicago is ready to share the first details of its upcoming Birreria Chicago – the third beer-themed restaurant and brewery to feature the original and unique recipes of the well-oiled Birreria Brother Brewers partnership.
Birreria
Much like its Roman and New York counterparts, Birreria Chicago will see the creative minds of Sam Calagione (Dogfish Head), Teo Musso (Birra Baladin) and Leonardo DiVincenzo (Birra del Borgo) come together to design the brewery, oversee the recipes, train the Eataly Chicago head brewer and participate in brews on site.
In line with the Eatalian philosophy, all recipes will include both American and Italian artisanal ingredients and techniques. Additionally, Birreria will feature an extensive list of individual beers from Birra del Borgo, Birra Baladin, Dogfish Head and other great American and Italian craft breweries. There will be plenty to eat as well, with a menu focused on beer-friendly food. Offerings will include artisanal cheeses, cured meats and rotisserie items from Eataly Chicago’s “Rosticceria.”
Birreria Chicago is scheduled to open before the end of the year, within Eataly Chicago, located at 43 East Ohio Street. The event will be celebrated with an exclusive beer dinner and toasted with the first onsite Birreria Brothers collaborative brew.
