Mmm ... Festina peach gazpacho
We set up a booth at the local farmers market last week and offered free samples of Festina Peche and a little something special from our brewpub kitchen: Festina peach gazpacho.
Fresh peaches make all the difference.
The chilled soup, with a balanced blend of sour peach and sharp pepper, was a huge hit. More than a few folks asked for the recipe, so we decided to share it here, too. It's a great treat on a warm summer evening.
Festina Peach Gazpacho
From the kitchen of Dogfish Head Brewing and Eats
Ingredients
1 cup Festina Peche
6 Peaches, skin on, deseeded
1/2 cup green onion, rough chop
1/2 cup green peppers, rough dice
1/2 cup corn, grilled
1/4 cup red wine vinegar
1/2 cup cilantro, rough chop
1/4 cup honey
Salt and Pepper
Method
In blender, add Festina, peaches and honey. Puree till smooth. Add onions, peppers, cilantro and corn. Puree for 20 seconds till broken down. Add salt and pepper to taste. Served chilled.
